lamb (bone-in, cut into pieces)

tbsp oil or ghee

tsp cumin seeds

tsp coriander powder
- 1
tsp turmeric powder

tsp garam masala

tsp red chilli powder (adjust to taste)

tsp salt (or as needed)

cups water
- 2
tbsp yogurt
- 2
green chillies (slit)

tbsp fresh coriander leaves (for garnish)

📌 Stepwise Preparation:
☑️ Marinate the Lamb:
- In a
bowl, mix lamb with yoghurt, ½ tsp salt, and ½ tsp turmeric. Let it
marinate for at least 30 minutes.
☑️ Sauté the Aromatics:
- Heat
oil/ghee in a heavy-bottom pan. Add cumin seeds, then onions.
- Cook
until golden brown, then add ginger, garlic, and green chillies. Stir
well.

- Add
pureed tomatoes, coriander powder, chilli powder, and the remaining salt.
- Cook
until the oil starts separating from the masala.
☑️ Cook the Lamb:
- Add
the marinated lamb and stir-fry for 10 minutes on medium heat.
- Pour
in water, cover, and simmer for 45 minutes until the lamb is
tender.
☑️ Final Touch & Garnish:
- Stir
in garam masala and simmer for another 5 minutes.
