🏆 Introduction

Masala Arbi (spiced taro root) is a crispy, tangy, and flavorful dish that is popular in North Indian households. This humble root vegetable transforms into a delicious accompaniment with the right blend of spices. Whether served with roti, paratha, or rice, Masala Arbi is a must-try!

Key Ingredients (Serves 4)

  • 500g arbi (taro root)
  • 2 tbsp mustard oil
  • 1 tsp cumin seeds
  • ½ tsp ajwain (carom seeds)
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp amchur (dry mango powder)
  • Salt to taste
  • 2 green chillies (chopped)
  • 1 tbsp ginger (grated)
  • 2 tbsp fresh coriander leaves (chopped)

  • Preparation Time: 15 minutes
  • Cooking Time: 25 minutes
  • Total Time: 40 minutes

📌 Stepwise Preparation:

☑️ Boil & Peel the Arbi:

  • Wash arbi thoroughly and boil in a pressure cooker for 2 whistles or until tender.
  • Let it cool, then peel and slightly flatten each piece using your palms.

☑️ Sauté the Spices:

  • Heat mustard oil in a pan until it reaches the smoking point. Reduce heat and add cumin seeds and ajwain.
  • Once they splutter, add grated ginger and chopped green chillies. Sauté for 30 seconds.

☑️ Cook the Arbi:

  • Add flattened arbi and cook on medium heat until golden brown and crispy.
  • Sprinkle turmeric, red chilli powder, coriander powder, and salt. Mix well and cook for 5-7 minutes.

☑️ Final Touch:

  • Add garam masala and amchur powder for the perfect tangy finish.
  • Garnish with fresh coriander and serve hot with roti or rice.
