Masala Arbi (spiced taro root) is a crispy, tangy, and
flavorful dish that is popular in North Indian households. This humble root

- 500g
arbi (taro root)
- 2
tbsp mustard oil
- 1
tsp cumin seeds
- ½
tsp ajwain (carom seeds)
- 1
tsp turmeric powder
- 1
tsp red chilli powder
- 1
tsp coriander powder
- ½
tsp garam masala
- ½
tsp amchur (dry mango powder)
- Salt
to taste
- 2
green chillies (chopped)
- 1
tbsp ginger (grated)
- 2
tbsp fresh coriander leaves (chopped)

📌 Stepwise Preparation:
☑️ Boil & Peel the Arbi:
- Wash
arbi thoroughly and boil in a pressure cooker for 2 whistles or
until tender.
- Let
it cool, then peel and slightly flatten each piece using your palms.
☑️ Sauté the Spices:
- Heat
mustard oil in a pan until it reaches the smoking point. Reduce heat and
add cumin seeds and ajwain.
- Once
they splutter, add grated ginger and chopped green chillies. Sauté for 30
seconds.
☑️ Cook the Arbi:
- Add
flattened arbi and cook on medium heat until golden brown and crispy.
- Sprinkle
turmeric, red chilli powder, coriander powder, and salt. Mix well and cook
for 5-7 minutes.
☑️ Final Touch:
- Add
garam masala and amchur powder for the perfect tangy finish.
- Garnish
with fresh coriander and serve hot with roti or rice.
