🍽️ Authentic Litti Chokha – A Traditional Bihari Delight

🏆 Introduction

Litti Chokha is a rustic and wholesome dish from Bihar, India. This flavorful meal consists of Litti—stuffed whole wheat dough balls baked to perfection—and Chokha, a smoky mashed mix of roasted vegetables. This dish is a must-try for anyone who loves authentic Indian flavours.


Key Ingredients (Serves 4-5)

For Litti:

  • 2 cups whole wheat flour
  • ½ cup water (as needed)
  • 1 tsp salt
  • 2 tbsp ghee
  • 1 tsp carom seeds (ajwain)

For Stuffing:

  • 1 cup sattu (roasted gram flour)
  • 2 tbsp mustard oil
  • 2 green chillies (finely chopped)
  • 1-inch ginger (grated)
  • 1 tsp nigella seeds (kalonji)
  • 1 tsp carom seeds
  • ½ tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp coriander leaves (chopped)

For Chokha:

  • 2 large eggplants (roasted)
  • 2 tomatoes (roasted)
  • 2 boiled potatoes (mashed)
  • 2 cloves garlic (finely chopped)
  • 1 onion (finely chopped)
  • 2 green chillies (chopped)
  • 1 tbsp mustard oil
  • 1 tsp salt
  • 2 tbsp coriander leaves

Cooking Time & Preparation

  • Preparation Time: 25 minutes
  • Cooking Time: 40 minutes
  • Total Time: 1 hour 5 minutes

📌 Stepwise Preparation:

☑️ Prepare the Dough & Stuffing:

  • Mix wheat flour, salt, carom seeds, and ghee. Add water gradually and knead into a firm dough.
  • In a bowl, combine all the stuffing ingredients. Mix well and keep aside.

☑️ Shape and Cook Litti:

  • Divide dough into equal portions, flatten each, and fill with sattu stuffing. Seal and roll into balls.
  • Bake in a preheated oven at 200°C for 30 minutes, turning occasionally. Alternatively, cook on a tandoor or open flame.

☑️ Prepare Chokha:

  • Roast eggplants and tomatoes until charred. Peel the skin and mash it with boiled potatoes.
  • Mix in mustard oil, chopped onions, garlic, green chillies, salt, and coriander leaves.

☑️ Final Touch & Serving:

  • Serve hot Litti with a generous portion of Chokha and melted ghee on top.
