🌟 Introduction

Saag is a traditional North Indian dish, rich in flavours and packed with essential nutrients. This delicious green curry is made using leafy greens like mustard leaves (sarson), spinach, and fenugreek. It is best enjoyed with makki di roti (corn flatbread) and a dollop of homemade butter.

🌟 500g mustard greens (sarson)
🌟 250g spinach (palak)
🌟 100g fenugreek leaves (methi)
🌟 1 onion (finely chopped)
🌟 2 tomatoes (pureed)
🌟 4 garlic cloves (minced)
🌟 1-inch ginger (grated)
🌟 2 green chillies (chopped)
🌟 2 tbsp maize flour (makki ka atta)
🌟 1 tbsp ghee (clarified butter)
🌟 1 tsp cumin seeds
🌟 1/2 tsp turmeric powder
🌟 1/2 tsp red chilli powder
🌟 Salt to taste
🌟 1/2 cup water


🌟 Stepwise Preparation

🟢 Step 1: Blanching the Greens ✔️ Wash and roughly chop the mustard greens, spinach, and fenugreek leaves. ✔️ Boil water in a large pot and blanch the greens for 10 minutes. ✔️ Drain the greens and blend them into a coarse paste using minimal water.

🟢 Step 2: Preparing the Tempering (Tadka) ✔️ Heat ghee in a pan and add cumin seeds. ✔️ Once they splutter, add minced garlic, grated ginger, and chopped green chillies. ✔️ Sauté for a minute, then add chopped onions. ✔️ Cook until the onions turn golden brown.

🟢 Step 3: Cooking the Saag ✔️ Add the pureed tomatoes and cook until the mixture thickens. ✔️ Mix in turmeric powder, red chilli powder, and salt. ✔️ Add the blended greens and cook on low heat for 20 minutes. ✔️ Stir in maize flour (makki ka atta) and cook for another 10 minutes. ✔️ Adjust consistency with water if needed.

🟢 Step 4: Final Touch & Serving ✔️ Add a dollop of ghee before serving for enhanced flavour. ✔️ Serve hot with makki di roti and white butter.
